Let’s learn together how to make one of the most iconic filipino dishes: Adobo, a dish loved by many for its simplicity and rich flavor. Every family has its own version, but the base always includes soy sauce, vinegar, bay leaves, garlic, and pepper.

Ingridients

  • 1 kg pork or chicken
  • 100 ml white vinegar
  • 120 ml soy sauce
  • 1 onion
  • Bay leaves
  • Salt
  • Whole black peppercorns
  • Olive oil
  • White rice for serving

Preparetion

  1. Cut the meat into medium-sized pieces.
  2. In a large bowl, combine the vinegar, soy sauce, sliced onion, bay leaves, whole peppercorns, and a pinch of salt.
  3. Add the meat and mix well to coat. Let it marinate for at least 30 minutes (or longer for more flavor).
  4. In a large pan, heat a bit of olive oil and brown the meat on all sides.
  5. Pour in the marinade and add a bit of water if needed to cover the meat partially.
  6. Cover and simmer over low heat for 30–40 minutes, until the meat is tender and the sauce is reduced.
  7. Adjust salt to taste and serve hot with white rice.
