Let’s learn together how to make one of the most iconic filipino dishes: Adobo, a dish loved by many for its simplicity and rich flavor. Every family has its own version, but the base always includes soy sauce, vinegar, bay leaves, garlic, and pepper.
Ingridients
- 1 kg pork or chicken
- 100 ml white vinegar
- 120 ml soy sauce
- 1 onion
- Bay leaves
- Salt
- Whole black peppercorns
- Olive oil
- White rice for serving
Preparetion
- Cut the meat into medium-sized pieces.
- In a large bowl, combine the vinegar, soy sauce, sliced onion, bay leaves, whole peppercorns, and a pinch of salt.
- Add the meat and mix well to coat. Let it marinate for at least 30 minutes (or longer for more flavor).
- In a large pan, heat a bit of olive oil and brown the meat on all sides.
- Pour in the marinade and add a bit of water if needed to cover the meat partially.
- Cover and simmer over low heat for 30–40 minutes, until the meat is tender and the sauce is reduced.
- Adjust salt to taste and serve hot with white rice.
